Hospital Food Gets Haute

Hospitals have begun to replace tired, standard-fare cafeterias with food courts, sit-down restaurants and gourmet coffee shops, often sporting high-end, ethnically diverse ingredients and applications. Grab-and-go foods are also frequently available.

For instance, Johns Hopkins Hospital and Health System, Baltimore, is in the process of developing a food court that will include Einstein Bros. Bagels, Subway, Freshëns smoothies, Noble Roman's Pizza, AFC sushi and Flamers Grill. Staff doctors will select healthy options on each menu, which will be indicated by a specially created logo.

In tandem with such new offerings, hospitals have overhauled their equipment, such as the new cook-chill system at St. Mary’ Health Care, Grand Rapids, MI, and a wood-burning pizza oven at St. Claire Hospital in Pittsburgh.
