Italy Outlaws “Molecular Cuisine”

03/03/2010

ROME—The Italian government has banned use of “chemical additives” in what it termed “molecular cuisine” in the country’s restaurants. Francesca Martini, the Italian secretary of the Ministry of Health, recently signed the bill into law.

Italy is also reportedly attempting to ban use of liquid nitrogen in restaurants, calling it a “gaseous substance.”

The Italian government notes that the “chemical additives” ban is being made “for the security of its citizens.” The ingredients, however, will still be available to product manufacturers.
