RCA Presentations, Reception at IFT

Members of the Research Chefs Association (RCA) will take part in the the IFT/RCA Culinology® Presentations on Sunday July 18 at 12:15 P.M. during the Institute of Food Technologists Annual Meeting and Food Expo in Chicago. Attendees will learn how industry leaders integrate culinary arts and food science to develop innovative food products. The panelists during the presentations will discuss their varied experiences in the product-development process—from ideation to market—and how they work as a team to create new products. The presentations are sponsored by the Almond Board of California. Registration to the IFT show is required to attend.

Chef Kevin Towels of YNot Foods and Food Scientist Heather Mohlman of Bellisio will share their experiences on “Sauce Chip Technology,” while Chef Christopher Warsow from Bell Flavors & Fragrances and Food Scientist Bill Christenson from Ed Miniat will discuss their experiences on “Creative Collaboration in Sodium Reduction for Proteins.”

RCA will also host a networking reception, sponsored by Eatem Foods Co., at the East Bank Club, 500 N. Kingsbury Street, Chicago, on Sunday July 18 from 6:00 to 8:00 P.M. Dress is business casual, nonmembers are welcome and no RSVP is necessary.
